What Is Mesclun? How to Grow Spring Mix

It may include arugula, endive, chervil, kale, young red and green lettuces, baby spinach, mustard greens, frisée, mizuna, young Swiss chard, radicchio, and sorrel. Mesclun mix may look fancy in a salad bowl, but it’s actually very easy to grow and there are two main ways to plant it. This produces a colorful display in the garden and seed companies choose an assortment of greens that mature in the same timeframe. The second method is to grow bands of individual leafy greens and combine them in the bowl when you harvest. For a lighter salad that features subtle flavors, mesclun greens — which are also sold under the name mesclun mix or spring mix — are a good choice. To use, rinse the freshly cut leaves in cool water to remove dust or dirt and drain well. Discard any leaves damaged by insects or weeds that may have slipped into the garden. Use the mesclun immediately, or wrap the leaves in a damp towel, place in a plastic bag, and refrigerate for up to 4 or 5 days. Just about any grocery store will have lettuce blends, though they aren’t always called mesclun.
